Weight Watchers Asian Steak and Noodles
As some of you know I am following the Weight Watchers program. I'm loving it and doing very well! If any one is thinking about starting the program I will be happy to answer any questions I can. This was something a little out of the norm from what I usually cook (Kent being Chinese and knowing the Asian cuisine much more that I do usually does all the Asian cooking in our home. He is a wonderful cook by the way!) but it was delicious, easy, and fun way to try something new.

What you Need
*2 1/2 tablespoons reduced sodium soy sauce
*1 garlic clove minced
*1 pound of flank steak (you can substitute chicken, fish, or pork if you like)
*1 (8oz) packages of lo mein noodles (if you can not find lo mein noodles you can substitute soba noodles or fettuccine noodles. I used basil fettuccine noodles found at Wal-Mart)
*2 tablespoons of hoisin sauce (if you do not have this on hand you can skip)
*1/8 teaspoon crushed red pepper, or to taste
*1 red bell pepper, seeded and thinly sliced
*1 green bell pepper, seeded and thinly sliced
*2 scallions, thinly sliced

Tips: You can really play around with these ingredients to make it fit your tast buds. I also added broccoli and carrots. Mushrooms would be great in this recipe as well. Look for lo mein noodles in your supermarket's Asian-food section.

Directions
1. In a shallow baking dish mix 1 tablespoon of the soy sauce and garlic. Add the steak, turning to coat . Let stand 20 min to marinate. Let steak cool at room temp and thinly slice.
2. Meanwhile, cook the noodles according to package directions; drain. In a large skillet add veggies and cook to your liking. Once veggies are cooked add sliced steak, noodles, remaining soy sauce, hoisin, and crushed red pepper, and scallions; toss to combine and cook on medium to low heat to warm.
3. Eat and enjoy!

Makes 6 Servings
Per serving (4 slices of steak and 3/4 cup of noodles and vegetables)
Points: 5 per serving
