What to Do With Bad Bananas

Banana Cupcakes
1 3/4 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, room temperature
3/4 cup sugar
2 eggs, room temperature
1 teaspoon vanilla
1 large ripe banana (or almost 1 cup)
1/2 cup whole milk, room temperature
1 cup of walnuts (optional)

Directions
1. Preheat oven to 350 degrees and line cupcake tray with 12 baking cups.

2. Sift together flour, baking powder and salt in a medium bowl with a wire whisk.

3. Cream butter and sugar in a mixer for about four minutes.

4. Add banana and mix until combined.

5. Add eggs and vanilla and mix until combined.

6. Add half the flour in three additions alternating with milk in two additions. Scrape down the sides with each addition.

7. Optional: Add 1 cup of walnuts

8. Bake for about 12-15 minutes or until done.

 

Honey Cinnamon Cream Cheese Frosting
1 ¼ cup confectioners’ sugar
½ cup (1 stick) unsalted butter, room temperature
1 tablespoon honey
1/8 teaspoon cinnamon

Directions
1. In a medium bowl, using an electric mixer, beat confectioners’ sugar, unsalted butter, honey, and ground cinnamon until smooth, 4 to 5 minutes

  2. When I saw your title, I was fully expecting a banana bread recipe. These look and sound delicious! I will definitely be giving them a try...but I will have to hide a banana so it can ripen. Bananas don't seem to last long in our home.

  3. Those look so, so good! I have a bag I keep in the freezer. As they get nice and brown, I peel them - cut them in 1/2 and throw them into the bag. I use them for smoothies or recipes when I need them. They stay perfect!

  4. Ooh those look good, and I just threw away a whole bunch of bad bananas and was wishing I knew something to make with them. Now I know what to make! :)

  5. I know I am a little late posting this but I get busy and can't read my blogs all the time. But I love this recipe and I have a banana that needs to be used very soon. I am definitely going to make these tonight hopefully. I will let you know how they turn out.
